The cool, older brother of the other pour over methods. The Chemex is the perfect method for sharing with friends. What you'll need for ~2 cups:
- a food-grade scale
- a grinder (preferably a burr grinder)
- a kettle
- a butter knife
- a Chemex
- 40-45g of coffee, depending on how strong you want it, medium-coarse grind
- a little more than 600g of water, 600g for brewing, the rest to rinse the filter and brewer
- Grind your coffee using a burr grinder to ensure grounds are consistent in size and that the coffee is extracted evenly. Grind your coffee to a medium-coarse grind, a little coarser than what you would use for a pour over and similar to the feel of sand
- Boil a little more than 600g of water and bring it to ~205 degrees Fahrenheit (or ~5 seconds after boiling)
- Place your Chemex filter into the top of the carafe. The multi-layer section should cover the spout.
- Pour some water over the filter to warm the carafe and to ensure the filter's papery taste doesn't leech into your coffee. Pour the water back out.
- Place your Chemex on top of your scale
- Add the coffee grounds to your Chemex. Give the carafe a little shake to make sure the grounds are level. Tare (or zero out) your scale.
- Quickly begin pouring the water in a circular motion, starting from the center and going outward. You want to pour enough water so that its double the amount of coffee grounds you used--so, if you used 40g of coffee, stop pouring when you have 80g of water in your Chemex.
- Quickly stir the coffee and water mixture for about 10 seconds using a butter knife (or anything similar) to make sure all of your coffee is evenly saturated. This ensures even extraction of the coffee and a deliciously sweet cup.
- Pour the rest of the water in, continuing in a circular motion working from the inside towards the outside of the grounds and along the sides of the filter.
- Give your coffee one more gentle stir with your butter knife, then lift your Chemex and place it back down on your scale with a gentle tap. This again makes sure all of the grounds are evenly saturatured with water and the tap at the end makes the coffee bed flat, which also helps provide an even extraction
- Let your coffee finish filtering through. Total brew time should be 4 minutes
